I recently discovered cookie butter at my local grocery store (it’s the same as Biscoff spread) and now I think I need to make these cookie butter funfetti triple chip bars by Averie Cooks. It would prevent me from eating straight out of the jar at the very least. Don’t these bars look yummy? Have you used cookie butter in baking yet?

When I was little, my mother never let us have funfetti anything because it didn’t have chocolate in it (so why would she make it?). Nothing says sunshine like a lovely lemon bar. So sweet and tart and all around sugary! I’ve never made them myself but thanks to this wonderful recipe by Epicurean Mom I think I’ll give them a try! I grew up with a chocoholic mother so if it didn’t have chocolate, it didn’t get made in our home. Haha. Time to catch up on all those non-chocolately goodies I missed, starting with some lemon bars.
